It was early in the Meiji period when icecream showed up in Japan for the first time. It is said that a Fusazou Machida was the first person who produced and sold icecream. In 1869, he started to sell one dish whose name was "Ai-su-ku-rin". The price was "two bu" gold which is equivalent to about eight thousand yen in today's money. It was so expensive that there were no Japanese among the customers.

Actually, there is an offical standard. According to JAS( Japanese Agricultural Standard), Soumen has a thickness between 0.7mm and 1.2mm. Hiyamugi is between 1.3mm and 1.7mm thick. The noodles which are thicker than these are called "Udon". In addition, there is one major difference between two. Soumen contains vegetable oil in order to make it thinner and longer.
